Homemade Vanilla Extract

Surprisingly, it's very simple to make! All you need is a large glass jar, some vanilla beans, and inexpensive vodka. Just combine the ingredients, seal the jar, and let it sit for a few weeks to infuse. Enjoy the rich flavor homemade vanilla extract in your recipes!
Sometimes I use the glass jar the vodka comes in. If I plan to gift the vanilla I'll pour the vodka into a jar *** link ***.
I really like the Madagascar vanilla beans from *** link***. I split them open toss them into the jar and fill the jar with vodka. Make sure to cover the beans with liquid. Place in a dark cabinet or pantry for a few weeks. You will notice the liquid darkens over time and the vodka smell turns to a wonderful vanilla aroma.
I keep a large jar of vanilla in the pantry corner that I can use to refill my regular jar I use to cook with. Just make sure that the beans are fully submersed in the liquid otherwise you risk the beans molding.
Makes a great simple inexpensive but elegant gift. Enjoy!

Ingredients:

Vodka 80 proof (cheaper the better)
Instructions:
Split beans open down the log side to expose the beans. Place in the glass jar. Pour vodka over the beans. Make sure the beans are completely submerged in the liquid. Seal the lid of the jar. Place in a dark cabinet and shake periodically. The liquid will darken over time and the aroma will smell like vanilla instead of vodka. The longer the beans brew the strong vanilla will be.
Notes:
The little black specs are vanilla seeds. You can strain them out or leave them for the flavor.
